Mexican Street Corn
INGREDIENTS
For the cake
- 1 cup vegetable shortening
- 2 cups sugar
- 4 large eggs, room temperature
- 3 cups all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup whole milk, room temperature
- 2 teaspoons vanilla extract
For the frosting
- 4 1/2 cups sugar, divided
- 1/2 cup boiling water
- 2 sticks margarine (1 cup)
- 1 cup whole milk
- 1 teaspoon vanilla extract
INSTRUCTIONS
For the cake
- Cream shortening and sugar. Add eggs one at a time beating well after each.
- Sift flour and baking powder and salt together three times. Add alternately with milk to creamed mixture.
- Bake in greased and floured pans at 350 about 30 – 35 minutes. Cool before frosting.
For the frosting
- Burn ½ cup sugar in iron skillet. Add ½ cup boiling water to make syrup.
- Add 4 cups sugar, 2 sticks margarine, and 1 cup milk.
- Cook until soft ball stage. Remove from heat. Add 1 tsp. vanilla.
- Set pan in cold water and beat until thick enough to spread.
- Don’t forget to share the spatula, beaters, or bowl with batter or icing you set aside for the little ones.
Homemade 7-Up Biscuits
Ingredients:
1 cup 7-up
1 cup melted butter
5 cups Bisquick
1 cup sour cream
Method:
Mix Bisquick, sour cream & 7 up. Knead the dough until the baking mixture is covered, dry the dough, and cut the biscuit.
Melt the butter on the bottom of the tray put the biscuit over the melted butter and bake for 15 min.

Fried Apple Pie!
INGREDIENTS:
2 cups dried apples or dried peaches.
1 cup of warm water.
3 tablespoons granulated sugar.
1 tablespoon butter.
1 teaspoon cinnamon powder.
1 can jumbo refrigerated flaky biscuits.
vegetable oil for frying.
INSTRUCTIONS:
STEP 1:
In a saucepan, combine dried apples and water. Cover and simmer for 30 minutes.
STEP 2:
Remove from heat and let cool, add sugar and butter, mix well, and set aside.
STEP 3:
Roll each biscuit into a circle, and place 1 tablespoon of apple mixture on half.
STEP 4:
To seal pies, moist edges of circles. Fold in half, making sure edges are even. Using a fork dipped in flour, press edges together to seal.
STEP 5:
In a heavy skillet, heat oil and fry the pies over medium heat until golden.
STEP 6:
Drain well on paper towels, and sprinkle cinnamon sugar over the pies.

- 1 cup butter (softened)
- 1/2 cup shortening
- 3 cups sugar
- 8 oz. cream cheese (softened)
- 3 cups all-purpose flour
- 6 eggs
- 1 tablespoon vanilla
Instructions
- Preheat oven to 325-degrees.
- Cream the butter and shortening together.
- Add the sugar and continue to cream.
- Add the cream cheese and beat until light and fluffy.
- Alternate adding the flour and eggs and mix until completely blended.
- Add the vanilla and mix.
- Pour into a greased bundt pan.
- Bake for 1 hour and 15 minutes or until cake tester comes out clean.

Lasagna
* Ingredients:
° Ground meat: 500 grams
° Garlic: 2 cloves (crushed)
° Onions: 1 piece (chopped)
° Basil: 1 tablespoon (fresh and chopped)
° Oregano: 1 teaspoon (dried)
° Brown sugar: 1 tablespoon
° Salt: 1 teaspoon
° Tomatoes: can (mashed)
° Tomato paste: 4 tablespoons
° Lasagna dough: 12 slices
° Eggs: 2 pieces (scrambled)
° Ricotta cheese: 2 cups
° Parmesan cheese: 12 cup
° Parsley: 2 tablespoons (chopped)
° Mozzarella cheese: 12 cup (grated)
INSTRUCTIONS
1. Put the meat in a skillet over a medium heat and stir until the meat turns brown.
2. Join garlic, onion, & stirring .
3. Add the fresh chopped basil, oregano, brown sugar, salt, mashed tomatoes, and tomato paste, and leave the mixture on the stove until the tomatoes are mixed with the meat for 30 minutes.
4. Preheated oven at 375 degrees .
5. Boil lasagna in salted water for 5 minutes, then drain and set aside.
6. Mix the scrambled eggs, ricotta cheese, Parmesan cheese and parsley
7. Place a layer of the boiled lasagna in an oven dish and spread half the ricotta cheese mixture and half the grated mozzarella cheese.
8. Spread one third of the tomato sauce with the minced meat and spread a pinch of Parmesan cheese.
9. Add another layer of lasagna, then the mixture of ricotta cheese and the rest of the mozzarella cheese and tomato sauce with the meat and the rest of the grated Parmesan cheese.
10. Put the dish in the oven for 30 minutes.
11. Take the plate out of the oven, leave it for 10 minutes, then cut it and serve.
